Lots of good ideas for a center dish among others...!
I definitely think you should give the in-laws a main event dish! Keep things as familiar as possible so they don't feel like they're missing out on anything. Gourmet magazine did an "ultimate vegetarian Thanksgiving feast" in their November issue. The main course (which I'm sure you can find on their website) is a gorgeous looking farro and mushroom pie.
As for me, I will be eating the side dishes and drinking champagne and wine. It's a holiday after all. Love to you and Brian and your families and furry friends. xo.
Sis is doing all the cooked stuff, turkey, stuffing, mashed tatos, gravy, rolls, roast veg. and green bean casserole.
I am making raw versions of the green bean casserole and parsnips mashed with miso gravy (find the recipes on goneraw.com). I am also making tortilla chips from raw food right now to go with guac and salsa and veggies for appetizers. I will make a gianormous salad with onion bread crutons (it is in the D. right now, smells fabulous!) and a ceaser dressing of some sort. For dessert: pumpkin tart and coconut ice cream from raw food real world and pecan pie from Cafe gratitude, which is where the onion bread recipe is from.
I plan on making a beautiful carrot/beet/ apple/ fennel juice to toast with!

btw, the green bean casserole and mashed parsnips were not that great, the pecan pie from the Cafe gratitude book was super sweet and tasty, the pumpkin pie from Raw food real world was rich and spicy and the coconut ice cream was very tasty, as were the jalapeno corn chips! I ate a salad and made a beet, beet greens, celery, apple, asian pear, ginger lemon juice to toast with!

My recommendation for the in-laws is vegetarian lasagna. You can get rice based lasagna noodles. Spinach, carrots, onions, peppers. Just an idea. Hope you have a wonderful Thanksliving dinner! I give thanks for all you do! Peace & veggies!
I am making a killer gluten free, vegan stuffing that rocks. Just use veg broth, earth balance and onions, celery, poultry seasoning and some flax/millet bread and bake for 30 min at 375. It;s TDF for sure!! Happy Holiday:)

Here's another great centerpiece idea, which is what Im doing..as Im not a tofu girl..but am a plant eating girl :)
Soften some veggies, like red pepper, tomotillos, and onion or whatever you have on hand would be good...Im thinking of throwing in some yellow squash this time too. Then make 1 cup of brown basmati ( or whatev) rice with veg. stock according to package. Add the veggies to the brown rice and veg stock to form a thick stew. Then Chop the top of a pupkin off, clean it out, wash it and oil the inside. Dump the rive/veg mix into the pupkin and place the top back on to bake for about an hour at 350. The pupkin will start to glisten and then turn brown and cave in a bit. Pull it out and check the inside for tenderness. You want to be able to easily fork the pupkin into the rice/veg stew. Serve inside the pupkin and it's a great eyecatching centerpiece! Enjoy. Check out my blog tomorrow to take a peak at how mine turned out :)
